Ingredients:
For the dough:
- 125 g. butter
- 500 g yogurt
- 4 eggs
- 250 g sugar
- vanilla
- 500 g semolina
- 1 pack baking powder (10 g)
For syrup:
- 200 ml. water
- 100 g sugar
- juice from a lemon
- 5, 6 tablespoons coconut flakes and 2 tablespoons Malibu rum
Preparation:
Mix soft butter, even melted (put it in the microwave for a few seconds) with sugar and eggs, one at the time. Add yogurt and mix everything well.
Mix baking powder with the semolina and add it to yogurt cream. Add vanilla.
Preheat the oven to 175 degrees C. with parchment paper lining a rectangular shape with a diameter of approx. 30 cm. long and 20 cm. width. Place dough in pan and bake about 30 minutes. Let the dough cool.
For the syrup, mix sugar in a saucepan with water, rum and lemon juice. Heat it for approx. 5 minutes and pour over cake while still hot!
Before serving, cut cake into cubes or small triangles and sprinkle on top the coconut flakes. Just delicious!

As we got used to, guys at Malibu Rum prepared yet another fantastic surprise for this drink’s fans, you would not guess it! One month before the new flavor will be released, we have the opportunity of choosing the newest addition in their aromas.
The contest is held on Malibu Rum’s Facebook page and anyone can choose between 3 great flavors: Citrus, Cranberry Cherry and Mint. Indeed, this should be a difficult choice, although I definitely prefer Mint aroma and would be glad to see it a winner. So all Malibu fans, go to Malibu Facebook Page, vote on of those three aromas and not only that you can decide the next addition but also you could win the $1,000 grand prize right before the New Year’s party or one of their daily prizes – clothes, accessories, surfboards and many other goodies anyone would love to have!
One word of advice though: you should be aged 21 or more! The next Malibu rum flavor will be revealed on 3rd January 2011, what other great way to kick-off the new year? May 2011 is the month this new drink will hit the shelves.

Another great commercial I ought to add it to our “commercials”. Yes, again, a funny one!
This is one of the best recipes for something sweet after a heavy meal, using the Malibu coconut rum and other ingredients listed below.
Ingredients:
400ml coconut milk
200g white chocolate
600g strawberries
7 sugar tablespoons
300ml sweet sour cream
5 tablespoons Malibu coconut rum
Parfait’s preparation starts with pouring coconut milk in a saucepan and add the white chocolate after. After the chocolate has melted, pour the mixture into a bowl and let the mixture cool. Meanwhile, grease with oil a rectangular server and cover the bottom with an Aluminum foil.
Take 150g strawberries and two sugar tablespoons, mix its with an electric mixer until they become a puree. Pass the mash through a sieve then cut in very tiny slices the remaining strawberries.
In another bowl mix the cream with the last two sugar tablespoons and Malibu rum until it curdles, then add it in the coconut blend with the strawberry and the puree. Put all the composition in a pan and let it cool for five hours, until it’s frozen.
Three hours before serving this dessert prepare the sauce by mixing two sugar tablespoons with three Malibu rum tablespoons and 400 g sliced strawberries and leave the sauce in the freezer for a couple of hours. Remove the parfait from your refrigerator one hour before serving it. Take it out of its foil, cut it into eight thick slices and pour the strawberries sauce over it.
According to my girlfriend, the cooking time for this Malibu parfait is 40 minutes, with a medium complexity.
Nutritional value….This could be a little hit for weight loss fans, it contains 406 calories, but you won’t eat it like each and every day, right? Enjoy this wonderful recipe brought for you by my girlfriend, it really worth a try!
