In this fats-free dessert, the pineapple compote is enhanced by the Malibu coconut flavor rum and it looks great decorated with fresh mint sprigs.

Preparation time: 15-20 minutes plus 45 minutes for cooling and up to  30 minutes for refrigeration

Serving is for 4 persons.

One serving contains:

Ingredients
25g glacé cherries, cut in half
3 oz Malibu coconut rum
1.3 kg pineapple
5 cm cinnamon stick, half cut
2 star anise fruits
75g brown sugar with high molasses content
25 g raisins

Decoration: fresh mint sprigs

How it’s made:

1. Place cherries in a bowl, pour 30 ml of coconut rum, mix well and leave aside.
2. Cut the pineapple on both ends. Remove the peel with a sharp knife. Cut the pulp in quarters, lengthwise. Remove fibrous core from each quarter and then cut into cubes.
3. For the syrup, place 450 ml of water in a saucepan and boil it. Throw in the pineapple, cinnamon, anise and sugar. Stir until the sugar dissolves. After that lower the flame, cover the saucepan and boil it on low fire for 8-10 minutes, until pineapple is soft.
4. Take the pan from heat and move all the pineapple pieces in a bowl, pressing the fruit to drain the juice in excess .
5. Add the raisins to the syrup, boil again on low flames for 15-20 minutes, until the amount is reduced by one quarter. Pour the remaining rum and continue cooking for 1 minute. Remove the pan from fire and also remove the cinnamon pieces.
6. Mix the syrup with cherries and pour the mix over the pineapple. Serve it cold right from the refrigerator.

Pina Colada cocktail with Malibu rum is one of my favorite Malibu drink, I could place it just above the Rum Martini cocktail. It looks awesome from the picture, right?This can be served in 2 different ways, as alcoholic or non-alcoholic drink and what it brings when enjoyed is a great taste of tropical aroma from all those mixed ingredients. Although the summer is over and it would been great for past hot days, it still remains a perfect rum cocktail to be enjoyed in a late evening with or without family.

As I said above, two Pina Colada variations can be made, by using alcohol or not. We will discuss both of its while one might prefer it alcohol-free or as usual, with alcohol. There are two Pina Colada recipes with Malibu coconut rum I use frequently, and here they come below:

First, we shall have a recipe for two persons serving, considering this you should half the quantities to have the perfect recipe for a single person. The ingredients for this Pina Colada recipe are 6 tablespoons crushed pineapples, 8 oz Malibu coconut rum, 6 tablespoons coconut cream (there are lots of varieties to choose from, I prefer the Pepe Lopez coconut cream) and crushed ice, about 2 cups of it. As usual, mix all the ingredients in a blender, fill a pina colada glass with the mix and serve it while it is still cold. Of course, you can garnish the Pina Colada cocktail with pineapple pieces and/or cherries, it all depends on how you like it. I personally skip the cherries here…

The second Pina Colada cocktail recipe contains the next ingredients: 1 oz coconut cream or coconut milk, 4 oz pineapple juice, 1 ½ oz Bacardi, ½ oz Malibu coconut rum and ice cubes, one cup should be enough. As above, mix all the ingredients in a blender, pour the mix in a glass and garnish with mango and pineapple. Sounds interesting, right?

As for the non-alcoholic Pina Colada recipe, just cut the alcoholic drinks from the ingredients list and there you go. Enjoy!
